Everyone could use a little friend to help them keep on track with healthy living during the holidays, right? I definitely can, so I was excited to get on board with this 6 Week Challenge.


I have not been the active, encouraging, and Gung-ho Elf I wanted to be this week, but I'm cutting myself some slack since I had a very busy week with a VVIP. I hope my Elf buddy Meghan understands that I not normally this lame.
Let's do a recap of the Elf Challenges for the week.
MONDAY: Go Meatless.
How did I do? Nailed it.
Brekkies: Stevia Maple Syrup (review coming!) with peanut flour sauce, sweet potatoes, scrambled with egg whites.
Lunch was a collection of snacks on account of a busy meeting schedule: Good Greens, almonds, honeycrips, lots of water
Dinner was FlatTop Grill since I ended up getting home from work fairly late. They had a great selection of vegetarian proteins and I made an amazing stir fry, DIY style. I was craving a sweet treat, so I finished up the night with some gelato.
TUESDAY: Send a card or handwritten note to a friend.
How did I do? Failed. I don't even have a good excuse. I have unpacked my boxes and have TONS of personalized stationary and beautiful cards, but I didn't get my act together. I LOVE writing notes and cards, so this should of been a task I easily checked off. I am calling in a rain check.
WEDNESDAY: Try a new workout today!
How did I do? Well, let me explain. I tried a new workout on the previous Sunday and I have been meaning to write a post about it because it was AWESOME!
Barre Bee Fit is definitely a new workout for me! I have never done anything like it and my body definitely let me know that the muscles I worked from the class had been neglected.
THURSDAY: Get up 15 Minutes Early to Meditate and Reflect.
How did I do? I didn't do it and this would probably of been the challenge that helped me the most this week. I am feeling really stressed about getting everything done for the next two weeks before we head off to Mauritius. I find that I am clenching my jaw throughout the day from stress, and my mind just races with constant lists of things I need to take care of or schedule before we go. I like to be busy, because I feel like I'm experiencing life to the fullest, but I know that I need to make time and start my day with prayer/gratitude affirmations/meditation.
FRIDAY: How many colors can you eat today? Challenge yourself.
How did I do? Eh. Today was okay in terms of colors. My week overall was veggie-packed since my best friend that was visiting is a vegetarian.
We had brunch at Yolk and I had a California veggie omelette and we shared some mind-blowing gingerbread pancakes. Dinner wasn't very colorful, but it cleaned out the fridge of some leftovers. I sauteed some mushrooms, onions, shredded Brussels, taco turkey meat, and spaghetti squash for a quick and simple dinner.
Maybe today wasn't very colorful, but I have a juice cleanse from JUICE Rx coming up next week and that is going to be mighty colorful.
WEEKEND: Clean out your Closet.
How did I do? I know the weekend has just started, but I have been doing this throughout the week as I have been unpacking. I feel like I should get a gold star for all the clothes I am purging.
Hopefully next week I have be a better version of my Elf- Self.

Pretty sure we don't wear the same shoe size which is too bad because I bet you've got some beauties in those bags!
